Victoria sponge cake

It was my friend Farrah\’s 40th birthday. She celebrated her special day with freedom as it was her family\’s release from 28 days of quarantine after coming back from the UK, having spent a rather longer than planned summer holiday there.

The easiest to make and best for transport by taxi is Victoria sponge cake full of butter and sugar, with raspberry jam in the middle. However, it takes time as the need for the mixer to aerate the batter is crucial. The best for the job is Misa, as he can sit, and multitask with his earphones and mobile phone. 

As soon as it was cooled and assembled, I ordered a taxi for the kids to play Uber Eats and make the delivery.

Apparently their son said that this cake was the best yet. I think after 28 days in quarantine any home cake would be tasting the best.
