Victoria Sponge

 

My birthday fell on Tuesday as we travelled back from Rajasthan, so although a wonderful day of happiness, there was no time for cake.  It was therefore a lovely surprise to open the front door after work on Wednesday and find Rennie and the children stood there with a Victoria Sponge not long out of the oven, replete with a thick seam of raspberry jam and dusting of icing sugar.

It was simply divine!  Light, oven fresh as mentioned, and of perfect even texture.  By unanimous agreement, Mary Berry would have approved – and it nearly all went in one sitting.  🙂 

Not only was the cake appreciated, but equally that Mum and Dad were present to join in the little celebration.  A real treat.
