Delicious sourdough bread

I am very proud how my sourdough baking skills are improving.
Since about April, when I created the sourdough starter, which I have to feed every week, I have been trying to bake sourdough bread (I wrote about this in detail recently). It’s like with everything, practice makes perfect.
Usually, the evening before I feed the starter, I make the dough in the morning, I fold the dough few times during the day, I let the dough rise, and bake it in the evening. Today was firth try and the best (I always say the last is the best!). Despite 4 power cuts when the bread was in the oven, even though it is pale, it still has nice crusty top and soft in the middle.
Like every night, we sit on the computers and after midnight Steve and I cut the still slightly warm bread and we had a “midnight feast”, just with butter (Steve had marmite), delicious. Kids will have the rest for breakfast tomorrow morning. Can’t wait to bake again.
Note: I have to try to find a better quality baking paper as the one I have is sticking to it making it difficult to remove it after baking.
